Program Learning Outcomes (PLOs)

1. Knowledge Base in Nutrition and Human Health
Students will demonstrate foundational knowledge and understanding of key concepts, scientific principles, and current research related to human nutrition, health, and dietary behavior through exams, written work, and presentations.

2. Critical Thinking, Problem Solving, and Quantitative Reasoning
Students will apply critical thinking, evidence-based problem-solving skills, and quantitative reasoning to analyze nutritional data and address issues in dietary practices and nutrition.

3. Ethical and Social Responsibility in Diverse Communities
Students will identify ethical principles and exhibit a commitment to social responsibility in promoting nutrition equity and health across diverse, multilingual, and multicultural populations.

4. Communication

Students will demonstrate effective written, oral, and interpersonal communication skills by using appropriate professional language and translating evidence-based nutrition information into accessible, engaging content for diverse audiences.

5. Career Readiness
Students will demonstrate career readiness by applying NACE competencies such as communication, professionalism, critical thinking, and equity & inclusion.

Knowledge: Mastery of content and processes of inquiry

The Minor in Nutrition equips students with foundational knowledge in human nutrition, dietary science, and health promotion. Through coursework that emphasizes scientific inquiry, students develop a deep understanding of nutrient metabolism, the role of diet in preventing chronic diseases, and evidence-based approaches to health and wellness.

Proficiency: Intellectual skills

Students in the Minor in Nutrition develop critical thinking, quantitative reasoning, and communication skills by analyzing dietary data, evaluating research, and translating complex nutritional concepts into practical recommendations. The curriculum challenges students to consider the application of interdisciplinary knowledge in real-world health contexts.

Place and Community: Urban and global mission

Rooted in the university’s urban and global mission, the Minor in Nutrition emphasizes culturally responsive practices and community engagement. Students explore health disparities, food access, and community nutrition in diverse urban and global populations, preparing them to consider aspects of wellness in multilingual and multicultural communities.

 

Transformation: Integrative learning

The Minor in Nutrition fosters integrative learning by encouraging students to connect personal, academic, and professional goals. Whether paired with majors in health sciences or others, the minor supports students in synthesizing knowledge and experiences to become informed advocates for improved nutrition.
